Carob is the fruit of an evergreen plant, belonging to the genus Ceratonia, known as carob tree. The plant produces pods similar to beans, within which lie the carob seeds that are used in a form of preparation similar to the flour, as a basis for the preparation of certain confectionery products and conserves.
This flour has a remarkable ability to absorb water, which is why the flour of carob beans is used as a thickener in many food preparations.
