INGREDIENTS
- For about 20 sandwiches:
- -20 slices of bread (gluten-free sunflower seeds loaf of Panito)
- -10 sun-dried tomatoes
- For the avocado cream:
- -1 ripe avocado
- -80 g of cream cheese (cottage cheese, soft cheese, quark ...)
- -1 pinch of salt
- -1 tablespoon extra virgin olive oil
- -pepper to taste
INSTRUCTIONS
- To prepare the sandwiches with avocado cream and sundried tomatoes start with the preparation of the avocado cream: Cut the avocado in half, remove the pit and peel and cut into pieces. Then put in a blender or in a mixer; add the cream cheese cutted into cubes, salt and a pinch of pepper. Blend for a few minutes, until the mixture is smooth.
- Cut the bread into slices and toast for a few minutes in the oven or toaster; therefore, if you will, with a preferred form of a biscuit cutter get the sandwiches, slice or cut in half to form two triangles. Then switch to the composition of your sandwiches: for a more decorative aspect you can use a pastry bag with a star nozzle, getting an effect even more precise. Alternatively, spread the avocado cream on the slice of bread.
- Cut the tomatoes in half and dry them with a paper towel to remove the excessive oil. Then place each half on the avocado cream.
- Serve the sandwiches with avocado cream and sundried tomatoes immediatly, as an appetizer or finger food with an aperitif.
