INGREDIENTS

- - 1 tablespoon sesame seeds
- - 1 tablespoon lemon juice
- - Extra virgin olive oil

INSTRUCTIONS
- Mix thoroughly the chickpea flour with rice flour in a bowl, then gradually add 120 ml of water and a pinch of salt. Knead by hand for at least 5 minutes. Form a ball and let rest for an hour in a cool place.
- Roll out the dough thinly. Obtain from the dough, with 3 cylindrical molds, 12 discs of 3 sizes: 4 wider for the base, 4 medium and 4 small ones. Line a plate with parchment paper, place the disks of dough and place on bake at 180 ° C for about 6 minutes.
- Slice carrots diagonally, blanch in salted water for 3 minutes and emmerse in water and ice. Then quickly toss them in a pan with one or two tablespoons of olive oil to make them crispy. Lightly season with salt and keep warm.
- Reduce diced green apple and red apple, sprinkling immediately with a bit of lemon juice.
- Dilute the tahini with lemon juice and a little water.
- Roll out the cream of tahini and lemon juice in the dishes, start by placing the four larger waffle and cover each with a spoonful of sauteed carrots and some apple cube. Form the other 2 layers and complete each composition with a little chilli oil, sesame seeds and herbs or salads choices.
