INGREDIENTS
- - 4 potatoes
- - 250g of grapes, white
- - 1 small green apples
- - 1 carrot
- - 50g of parmesan cheese
- - 1 bunch of chives
- - 0,50 lemon
- - Oil
- - Salt
- - White pepper
- - Coriander beans
INSTRUCTIONS
- Peel the potatoes and carrot, cut into cubes by an inch low. Steam cook for 10 minutes until they are tender but abundant still slightly crunchy.
- Peel the apple, divide it in half removing the seeds and reduce it in cubes as large as carrots and potatoes, season immediately with the lemon juice, a pinch of salt, a tablespoon of olive oil and a generous pinch of coriander.
- Shell the grapes, divide the beans in half lengthwise and toss with a pinch of salt, freshly ground pepper and a tablespoon of olive oil.
- Shredd finely the chives and mix with 2 tablespoons of olive oil.
- Season the diced potatoes and carrots with olive oil and chives, add the apple and grapes, stir gently and spread the mixture into 4 cups, possibly supplemented with Parmesan reduced in thin slices and serve immediately.
