INGREDIENTS
- - 120 grams chickpea flour Probios
- - 50 gr wheat germ Easy To Go
- - 3 zucchini
- - 5 tomatoes
- - 1 pinch of mesclun salad
- - 1 fresh onion
- - 1 lemon
- - Lemon oil q.b. Il Nutrimento
- - Leaves unleavened spelled Break & Bio q.b. (for presentation)
- - Water q.b. for the batter
- - sea salt and pepper q.b.
INSTRUCTIONS
- Wash and clean the zucchini, then cut them into little pieces to cook in the pan, along with the chopped spring onion and with lemon oil.
- Aside in the meanwhile prepare a soft batter with chickpea flour and water, taking care not to create lumps. Season with salt and pepper.
- Once you saute the vegetables, add them to the batter of chickpeas and cook the mixture in a pan as small thin pancakes, turning a few times.
- When ready, with a heart-shaped pastry cutter, create so many hearts with chickpea pancakes and alternatewith of fresh tomatoes and pierce on a skewwer.
- Serve on a plate with a couple of sheets of unleavened azimo bread and a handful of mesclun salad oil and lemon.
