INGREDIENTS
- - 6 eggs
- - 1 shallot
- - Celery
- - 4 tablespoons chopped fresh tarragon
- - 2 tablespoons extra virgin olive oil
- - 2 tablespoons mustard
- - 1 tablespoon capers
- - 3 teaspoons of mayonnaise
- - 1 teaspoon paprika
INSTRUCTIONS
- Cut lengthwise 6 hard-boiled eggs. Crumble all the yolks together. Add: 1 shallot and 1 celery stalk, chopped 4 tablespoons chopped tarragon or marjoram, 2 of olive oil and 2 mustard, 1 chopped capers, 3 teaspoons of mayonnaise and 1 of paprika. Fill the egg halves with this smooth cream.
