Flans of Zucchini and Golden Potatoes with Chives

  1. Cook the potatoes without having them peeled, for 10-15 minutes but don’t boil them: the center must remain slightly hard. Drain and let cool.
  2. Cut the zucchini into small cubes, season with the chopped chives (putting aside some stems for decoration), add two tablespoons of olive oil, a pinch of paprika and salt. Then put them ito sautè in a skillet over medium heat for about 10 minutes.
  3. Peel the potatoes, mash coarsely with a fork and season with 2-3 tablespoons of olive oil, a pinch of salt and thyme leaves. Lay them on a baking tray lined with baking paper and gratin in the oven at 190 ° C for 5-10 minutes, until golden.
  4. Roll out in 4 square molds (or other shape) a first layer of potato gratin, a second and a third of zucchini potato, at the end press lightly. Turn out the flans in dishes decorated with the chives that you have kept aside.
