INGREDIENTS
- 150 gr cous cous
- 2 zucchini
- 6 dried tomatoes in oil
- bread crumbs q.s.
- parsley q.s.
- extra virgin olive oil q.s.
- salt q.s.
INSTRUCTIONS
- Boil 200 ml of salted water and pour it on the couscous that you put in a serving dish with high sides. Let it swell, stirring often with a fork.
- Heat 2 tablespoons of oil in a pan, add the zucchini that you have washed, peeled and cut into julienne strips with a large holes grater. Add salt and let them stew for a couple of minutes.
- In a kitchen mixer add the couscous, the zucchini, the well-drained and shredded dried tomatoes, the well-rinsed parsley and whisk intermittently.
- Add breadcrumbs just enough to make a mixture that can be worked with your hands. Form small meatballs and place them in a pan.
- Sprinkle them with a little oil and bake in a preheated oven at 180°C for 15/20 minutes.
