INGREDIENTS
- - 300g tofu
- - 1 orange
- - 100g velerian salad
- - 2 Nori Sheets
- - marinated ginger for sushi
- - 2 teaspoons Brown Sugar
- - 3 tablespoons Extra Virgin Olive Oil
- - 1 tablespoon Soy Sauce
- - 1 tablespoon Balsamic Vinegar
- - Salt
- - fresh grated ginger
- - turmeric
- - chives
INSTRUCTIONS
- Boil the tofu for 20 minutes with salted water, then drain it and let it cool down. Now, grind it and season it with 2 tablespoons oil, the grated peel of half an orange, the marinated ginger and a few salt.
- Season 80g valerian salad with salt, a pinch of ginger and turmeric and, once wilted, combine it to the tofu.
- In a small pan, caramelize the walnuts with the sugar, after one minute add the balsamic vinegar, let it season for a little bit more and remove from the heat.
- In a small pan, combine the orange juice, the soy sauce and a tablespoon oil, then let it simmer on a low heat until it reduces by one half.
- Layer the nori and cover them with the tofu sauce leaving the edges free. Then, roll the nori to create a roll. Lastly with a sharp knife, divide each roll into 6 small rolls.
- Place the rolls on a serving tray, place the caramelized walnuts and the orange sauce on top, then complete with the remaining valerian salad and the chives.
