INGREDIENTS
- - 2 Panito Probios
- - 4 Green Tomatoes
- - 8 eggs
- - 1/2 Purple Cabbage
- - 50 grams of Grana
- - 50 ml of milk
- Vegan mayonnaise:
- - 100 ml of Soymilk
- - 250 ml of sunflower oil
- - 1 teaspoon mustard
- - 3 tablespoons lemon juice
- - salt q.s.
INSTRUCTIONS
- Cut the tomatoes that have been washed before in round of 1 cm hight, fry in a
pan with extra virgin olive oil until they take color. - Meanwhile, beat with
a whisk the eggs, add the parmesan and finally the milk without forming a lot of foam. - Pour the mixture into the pan with the tomatoes and simmer the omelet.
- Finely slice the
purple cabbage and cut the panito in half. - Prepare the mayonnaise: Pour into the glass of the blender the soy milk, mustard and salt. Begin blending, after a few minutes pour in the sunflower oil in a fine flush until it starts to thicken. Add the lemon juice, blend for a few seconds and the mayonnaise is ready.
- Proceed in the composition of the finger food. Panito at the base, then mayonnaise, purple cabbage and the green tomato omlett, all held together by a toothpick.
