INGREDIENTS
- Ingredients for 1 sandwich:
- 1 naan bun
- 1 bunch of rocket salad
- 1 tablespoon of nut kernels
- For chickpeas hummus:
- 150 gr boiled chickpeas
- 1 garlic clove deprived of the internal bud
- 1 tablespoon of tomato concentrate
- some dried tomatoes in oil
- 1 tablespoon of extra virgin olive oil
- 1 pinch of chili pepper
- oregano
- half a lemon
- salt
INSTRUCTIONS
- Start by preparing the red chickpea cream. Mix the tomato paste and the chilli with a spoon of hot water. Put in a blender glass the cooked chickpeas, half a garlic clove, the diluted tomato paste, a pinch of salt and oregano, a drizzle of olive oil and blend until a smooth cream is obtained.
- Finally add the dried tomatoes and briefly operate the blender so that they are coarsely chopped (you can also chop them with a knife and add them to the cream).
- Season the rocket with a little olive oil, a pinch of salt, chopped walnut kernels and a splash of lemon juice. Accompany the bread with the rocket salad and chickpeas cream.
